Roll into a neon-lit fantasy as Shannon Martinez, the revolutionary force behind plant-based dining in Australia, transforms the Pier St underpass on Tumbalong Boulevard, Darling Harbour into Neon Dreams—a rebellious and wildly delicious take on the classic American diner. All served up with a side of roller skating.

Experience Shannon’s ultimate plant-based take on classic American diner staples. Juicy burgers, crunchy, fluffy fries, creamy mac & cheese and jelly donuts—all crafted with Shannon’s signature focus on big, unapologetic flavours. 

Post (or pre) feast, glide onto the roller rink—an airline-themed fantasy complete with a grounded mail plane turned DJ booth—and skate to vinyl-only beats spun by local selectors. Whether you’re a seasoned skater or a total newbie, the rink welcomes everyone—plus, it’s fully accessible for wheelchairs and mobility aids.

Thirsty? The Trolley’d bar is shaking up zero-waste, foraged cocktails and retro milkshakes, using ethically sourced ingredients and native botanicals—expect sips like lemon myrtle margaritas and Illawarra plum sours.
