ChocoSoil is a community-based urban agriculture research project that
integrates soil making and rooftop container gardening into the
day-to-day operations at their facility. It is an embodiment of
their cradle-to-cradle approach to food waste and is a model for high
density chef gardening and soil regeneration in small urban spaces.
Basically, it integrates soil making into the day-to-day operations at
ChocoSol and reflects our work towards producing healthy urban soil
ecosystems and rooftop grown spices for chocolate making on site at
our location in Toronto
Cradle to cradle’ is an approach where the creation and disposal of
waste is considered from design to production. This re-integration of
our waste contrasts the “out of sight, out of mind” mentality that
currently exists in our urban waste production system. Their food
scraps, garden clippings, paper towels, cacao shells and coffee
grounds are sorted and composted on-site. This compost is mixed with
coco coir to create the soil for the edible weeds, herbs and flowers
we grow for our chocolate, tamales and tortillas.
Their Tortilla Project is community based research that focuses on
creating healthy, delicious, maize foods. Tortillas and tamales are
inspired by Indigenous traditions, and Cacao Maize Power Cookies that
bridge our chocolate and tortilla kitchens. The project reflects our
commitment to support Ontario’s local, ecological farming community
and provide our customers with nutritious, local, and sustainable
food.
Michael will be talking about many sustainable approaches at Chocosol
and may even bring their Bicycle Blender. Michael will have free
samples of their delicious chocolate, drinking chocolate and
coffee's. He will also have some take home options if you wish to
