This savoury rice dumpling is created with seasonal sawara, succulent white- fleshed Spanish Mackerel caught wild off the coast of Japan, and crisp young bamboo shoots – takenoko – wrapped in refreshing yuzu zest seasoned Japanese glutinous rice.
