Celebrate the start of SALMON SEASON WITH FRESH RECIPES AND BRUSH UP ON ESSENTIAL techniques in this hands-on COOKING CLASS.Students will learn to make these salmon-focused dishes: * POACHED SALMON WITH PEAS & PASTA * BRAISED SALMON IN MUSTARD SAUCE * STEAMED SALMON POT-AU-FEU WITH ANCHOVY BUTTER * SAUTÉED SALMON CAKES These recipes will expand your repertoire for entertaining on the weekends or cooking a healthy weeknight meal for the family. Chef Madelaine will also cover salmon varieties, as well as how to shop and store salmon at home. SKILLS COVERED: selecting and purchasing SALMON; techniques for COOKING FISH, including to poach, sauté, steam and braise; making cream sauce, butter sauce, and vinaigrettes from scratch; basic knife skills. ------------------------- ABOUT THE TEACHER: Madelaine Bullwinkel [http://chezm.com/] has been teaching the culinary arts for over two decades.
