These recipes will expand your repertoire for entertaining on the
weekends or cooking a healthy weeknight meal for the family. Chef
Madelaine will also cover salmon varieties, as well as how to shop and
store salmon at home.
SKILLS COVERED: selecting and purchasing SALMON; techniques for
COOKING FISH, including to poach, sauté, steam and braise; making
cream sauce, butter sauce, and vinaigrettes from scratch; basic knife
skills.

teaching the culinary arts for over two decades. She also leads
immersive culinary tours in various regions of France. The Chicago
