MAKING CLASS! Neapolitan PIZZA OR _pizza Napoletana_, originated in
Naples, Italy around the 1700's. Tomatoes were put on top of flatbread
and prepared for sailors returning from fishing trips by their wives,
la marinara's (a seaman's wife). Of this, came the marinara pizza. A
pizza with no cheese! A crime to some a delicacy to others. In 1889, a
man named Raffaele Esposito, a baker, created a pizza for King Umberto
I and Queen Margherita of Savoy, while they were on a trip to Naples.
Esposito baked them a pizza named in honor of the queen whose colors
represented the Italian flag: red (tomatoes), white (mozzarella), and
green (basil leaves). This is what is now known as the classic
Neapolitan pizza today.
