Not all spiciness is created equal: from the fruitiness of fresh
habanero and the chocolate notes of dried ancho chilies to the tingle
of Sichuan peppercorns and the slow-building heat of cayenne, spice is
an element that gives recipes contrast and complexity. In this class,
you’ll get comfortable with an array of ingredients we think every
heat aficionado should have in their kitchen: a rainbow of fresh and
dried chilies; a variety of peppercorns; condiments like gochujang,
harissa, sambal oelek and more; plus unexpected sources of milder
heat, like watercress. You’ll practice different ways to modify heat
using acids, sugar and fat and will try your hand at making different
versions of some of our favorite salsas, slaws and chili oils.
You’ll come away from this class understanding how to make dishes
that suit your spice tolerance—no matter how high or low—and
celebrate the culinary power of heat in recipes from Mexico, China,
Cambodia, Italy and more.
Recipes in this class include: Sichuan Dry-Fried Cauliflower;
Cambodian White Pepper Coconut-Curry Chicken; Fusilli with Fresh
Herbs, Artichokes, and Watercress; Fish Tacos with Lime-Pickled

Different classes have different student/participant caps. Here are
general guidelines for maximum student capacity:

WHAT ARE MY TRANSPORT/PARKING OPTIONS GETTING TO THE EVENT?
Please get directions to 49 India Street and walk across the street ot
the double brown doors, with bowties on them. 177 Milk Street (our
building) has multiple doors, most of which are locked by 6 p.m.

You will taste throughout class before sitting down to a dinner of
your making.
ARE THERE ID REQUIREMENTS OR AN AGE LIMIT TO ENTER THE EVENT?
Yes. All students must be 18+ years old. Students 12-17 years old are
welcome to participate with an adult guardian or parent.

IS MY REGISTRATION/TICKET REFUNDABLE OR TRANSFERRABLE?
Yes. Tickets are refundable up to seven days before an event. Tickets
are transferable to another student for the same class at any time.
Within seven days of the event, we do not offer refunds and class
credits.
